Here is a simple, healthy, flavorful and complete Vegan meal. It is not only easy and quick to make but also is DELICIOUS!!!!

The Poke Bowl has tender tofu marinated in a delicious ginger garlic and soy sauce with brown rice, stirred veggies, edamame, red cabbage, and avocado.

Ingredients – Per serving
  • For TOFU ORGANIC NON GMO Extra firm cut into cubes 1.5 tsp soy sauce, 1 tsp siracha hot sauce 1/2 tsp tomato ketchup Grated ginger and garlic 1/4 tsp each 1 tsp sesame oil to grill Salt and pepper to taste
  • For Poke Bowl filing 1/2 c cooked brown rice 1/2 c steamed edamame 1/2 c raw red cabbage chopped 1/2 c mixed greens chopped 1/2 avocado cubed 1 c stirred veggies ( broccoli, carrots, red and green bell peppers, green onions, zucchini sliced)

  1. Drain the water from the tofu and press it in between paper towels to remove the extra moisture. I like using extra firm tofu. Mix all the sauces and ginger garlic, salt and pepper and marinate tofu pieces in it for 15-20 minutes.
  2. While the tofu is marinating, cook the brown rice. You may also prepare the stir fried veggies. Chop all veggies. Heat 1 tsp of sesame oil, stir fry all veggies and add salt to taste. Flavor with 1/2 tsp chili garlic sauce.
  3. Chop the red cabbage, mixed greens and avocado ( cut into cubes)
  4. Once the tofu is marinated, heat oil and add the tofu pieces and cook on medium flame till it is cooked and is brown.
  5. Finally assemble you poke bowl and ENJOY!!!!
